Hello there, i wanna share you something about Japanese's Tofu.
Japanese Tofu Hiyayakkoblog

Tofu is soybean curd, which is made by coagulating tonyu (soy drink). Nigari (magnesium chloride) is commonly used to make tofu in Japan. Tofu is rich in protein.

And this is the variety of tofu: Kinugoshi-dofu (silken tofu) is the softest tofu. It has very smooth texture. Momen-dofu (cotton tofu) is made by draining some moisture, so it is firmer than kinugoshi-dofu.

Any ideas? big grin:

Japanese Tofu Tofu-burgers-su-1010597-l

Ingredients:
  • 1 lb cotton tofu (firm tofu)
  • 3/4 lb boneless and skinless chicken breast, finely chopped
  • 1/2 cup panko breadcrumb
  • 1 egg, beaten
  • 1/4 cup chopped green onion
  • 1 inch fresh ginger, peeled and grated
  • salt and pepper to season
  • vegetable oil to frying
  • For sauce:
    • 4 Tbsp soy sauce
    • 3 Tbsp mirin
    • 2 Tbsp water

  • For topping:
    • grated daikon radish

Preparation:

Wrap tofu with paper towels and place it on a flat tray. Put a cutting board or a flat plate on top the tofu and let sit for about 15 minutes. Put egg, panko, tofu, chicken, ginger, and green onion in a large bowl and mix well. Season with salt and pepper. Make four large oval-shaped patties. Heat some oil in a large skillet. Fry the patties on medium-high heat until lightly browned. Turn them over and cover the skillet with a lid. Cook on low heat for a few minutes, or until cooked through. Serve burgers into plates. Heat water, soy sauce, and mirin in the skillet and bring to a boil. Top burgers with grated daikon radish and pour the sauce over.
